A non meat Thursday
A non meat Thursday using up the last of my courgettes, aubergine and fresh coriander.
It is quick and easy to knock something together especially when using tinned fish - think oily fish, omegas and all.
And the aubergine fritters are so easy. Make a batter with gram flour, baking soda, nigella seeds, cayenne pepper... and I think this can be classed as a healthy option, much better than a takeaway.
P.S. A little squeeze of fresh lemon juice will finish it off nicely.
